RECIPES

*Herb Salad Dressing*

Ingredients:
– Handful of fresh cilantro / parsley or basil
– 1/4 cup cashews
– 1/4 cup water
– 1 garlic clove
– 1 small piece of ginger
– Himalayan salt & pepper to taste
Blend all together in high-speed blender until smooth
Makes two servings, can store the other half in fridge for next day

*Lentil Potato Curry Soup*

Ingredients:
– 1 cup lentils (soaked in water for a few hours)
– 1 onion
– 4 cloves garlic
– 4 carrots
– 1 zucchini
– 2 stalks of celery
– Approx 500g potatoes
– 1 head of broccoli
– A few mushrooms
– 2 cans coconut milk

Spices:
– 1 tbsp cumin
– 2 tsps curry
– 1 tsp oregano
– Pink himalayan salt & pepper to taste
– Juice of 1 lemon (before serving)

Directions
1. In a large pot, fry onions & garlic in some water (or a touch of coconut oil)
2. After a few minutes, add in carrots, zucchini, celery and potatoes
3. Then add 3 cups of water
4. Add in lentils, broccoli, mushrooms, coconut milk and spices
5. Allow to simmer for approx 20-30 mins (until potatoes are tender)
6. Before serving, stir in the juice of 1 lemon
7. Serve and enjoy! 🙂
